PREPARATION
PREPARING THE BAGUETTE
1.
Preheat the oven to low broil.
2.
Trim the ends off of the baguette and cut into slices.
3.
Place slices on a baking sheet and lightly brush with olive oil.
4.
Place in the oven on broil for 3-5 minutes, or until slices become crispy and remove when bread is to your desired level of crispness.
PREPARING THE SALAD

Dice the tomatoes, onions, cucumbers, red and yellow bell peppers, and crumble the feta (if it doesn't come already crumbled).
6.
Juice the lemon and add that to the olive oil. Mix well until combined.
7.
Mix the lemon juice/olive oil mixture into the salad mixture and toss to combine well.
TO SERVE

Spoon 1-2 spoonfuls of the salad mixture on each toasted piece of baguette.
9.
Sprinkle with pepper to taste and top with any herb of choice (if desired, not necessary).
