PREPARATION
1.
In a large frying pan, lightly coat the bottom with 1 tbsp olive oil.

Add the asparagus and cook over medium heat.
3.
Occasionally turn the asparagus so each side cooks evenly.
4.
While the asparagus is cooking, in another pan, add the remaining olive oil and turn the heat to medium-high.
5.
Add the pine nuts and cranberries.
6.
Saute for ~5 minutes, stirring frequently to toast the pine nuts.
7.
Evenly distribute the asparagus on two plates and spoon the pine nuts and cranberries over the asparagus. Season with salt and pepper.
