PREPARATION
MAKING THE BASE/MARINADE

In a medium bowl, stir together the soy sauce, mirin, and sugar until the sugar is dossolved.

Stir in the sesame oil, cornstarch, ginger, and scallion, and season with pepper to taste.

Add the beef, tossing it well to coat the sliced evenly throughout. Let stand 20 minutes at room temperature or for up to 1 hour refrigerated.
COOKING THE NOODLES

Bring a large pot of water to a boil and cook the noodles until tender yet firm, about 3 minutes. Drain and divide among large plates.
PREPARING THE STIR-FRY
