PREPARATION
1.
Put a large pot of water on the stove and bring the water to a boil. You can proceed to step #2 once the burner is lit (you don't need to wait for the water to boil).
2.
Add the oil to a large-ish, deep frying pan. Turn the burner on to "medium" and put the chicken into the pan. Lightly brown the chicken on both sides.
3.
Reduce the heat, put the mozzarella slices on top of the four portions of chicken.
4.
Add marinara sauce around the chicken and lightly top the cheese with marinara. Be careful to keep the cheese on top of the chicken (it will melt in place).
5.
Bring up the heat until the marinara begins to bubble, then reduce the heat. Let this sit for about 20 minutes.
6.
Add salt to your large pot of boiling water and then add egg noodles. Cook for approx 12 minutes, then drain and set aside.
7.
Periodically spoon the hot marinara onto the cheese to begin to melt it. This can be done while you're waiting for the egg noodles to cook.
8.
Once the cheese is melted, serve each portion of chicken and cheese on top of the egg noodles. Finish with the Italian parsley.
