PREPARATION
1.
Preheat the oven to 400 degrees.
2.
In a large bowl, toss the cubed potatoes with the minced garlic, onion, olive oil, melted butter, and season generously with salt and pepper.
3.
Scrape the potato mixture into a baking dish where the potatoes are not overcrowded and roast for 25-30 minutes.
4.
While the potatoes are roasting, cook the bacon.
5.
Cook the bacon until crispy and transfer to a paper towel lined plate. Save the trimmings and grease.
6.
After 20 minutes, remove the potatoes, drizzle some bacon trimmings/grease over them, toss the potatoes very well and roast for another 20-30 minutes.
7.
Once the potatoes are tender, remove from the oven.
8.
Top with freshly grated parmesan, crumbled bacon, and chopped parsley.
