PREPARATION
ROASTING THE BEETS

Preheat oven to 375 F.

Cut each end of the beet off and peel.

In a 9 x 9 baking dish, add 1 cup water, it should be an inch or so.

Cover with foil and bake, checking after 45 minutes.

Beets are done when a fork can enter through smoothly.

Remove beets from oven, and let sit and cool.
PREPARING FILLING

While beets are cooking, cook rice according to package directions.

Mince the basil and crumble the goat cheese.

When the rice is done and cooled, add the basil, goat cheese, and raisins.
STUFFING THE BEETS

Once beets are cooled, take a large spoon and start hollowing out each beet.
