PREPARATION
1.
Preheat oven to 400F.
2.
Cut chicken diagonally just enough to open it up but not all the way through.
3.
Place 2 slices of mozzarella cheese, 2 slices of tomato, 1/4 cup basil leaves and sprinkle 1/2 tbsp dried parsley on top. Close chicken breasts and secure with a toothpick.
4.
Coat the bottom of a 9x9 baking dish with olive oil and coat and add the chicken breasts to the baking dish. Sprinkle the tops with parmesan cheese and put into oven.
5.
Cook for 20 minutes at 400F. If more time is needed, check every 5 minutes, as chicken will continue to cook once it is removed from the oven. Using a meat thermometer, make sure internal temp is 165F before removing.
6.
Can serve with more basil on top if desire or as is.
