PREPARATION
1.
Preheat the oven to 375 F.

Slice the baguette into thin slices and brush the top of each piece with olive oil.

Place in the oven and bake to desired level of crispness.

While the bread is crisping, cook the peas. Over high heat, bring 1 cup of water to a boil and add the frozen peas and boil for 2-3 minutes.

Drain and blanch with cold water so they do not get too mushy.

Peel and pit the avocado and add to a small bowl with the fresh lemon juice. Mash the avocado until there are no chunks left.
7.
Once the bread is crisp to your liking, begin by spreading the avocado on each piece.
8.
Top with sliced radish, peas, arugula and pea shoots.
