1.
Slice the chicken in either 1 inch cubes or long strips for the skewers.
2.
In a large bowl whisk together the remaining ingredients then add in the cubed chicken and toss to coat.
3.
Cover and refrigerate the chicken for 45 minutes to 3 hours. Close to the end, soak the skewers for at least 30 minutes in water.
4.
Heat the grill to medium high heat.
5.
Thread the chicken onto metal or wooden skewers.
6.
Oil the grates of the grill or grill pan and place the skewers on them.
7.
Grill the chicken for 3-4 minutes then flip it over and grill for another 3-4 minutes or until the chicken is cooked through.
8.
Serve with tzatziki sauce (see pairs with recipe)
Hands on time is minimal - chicken needs to marinade for at least 45 minutes, 1-3 hours preferred.
