PREPARATION
HOW TO MAKE THE GOAT CHEESE SPREAD
1.
Follow the steps in the dependent recipe for the goat cheese spread.
GRILLING THE ZUCCHINI

Using either a grill or a grill pan on medium-high heat, brush with olive oil.
3.
Cut the zucchini in half, and then thinly slice horizontally.
4.
Grill each slice until they start to char a bit.
WILT THE KALE

Over medium-high heat, add the spinach and olive oil and continue to stir until wilted, about 5 minutes.
ASSEMBLING THE SANDWICH

Cut the baguette in thirds and cut each piece in half.
7.
Spread one side of each sandwich with goat cheese spread.
8.
Top with wilted spinach and grilled zucchini.
9.
Sprinkle with crushed red pepper flakes and a pinch of sea salt and close the sandwich and serve.
